VINIFICATION: This Sparkling Chardonnay was made from Heritage vines planted in 1954, picked in two lots. Grapes were immediately pressed. The juice fermented on its lees in 90% neutral French oak and 10% new French oak. Lees (leftover yeast particles created by fermentation) and oak create a balanced texture and body.

"WHY I LOVE IT" by Sommelier Kristin Olszewski: "Every sommelier will tell you they love old vines. But why exactly are they so special? Old vines yield less fruit but more concentration of flavor in each individual grape! Truly quality over quantity.
This is certainly true in the case of our Sparkling White - made from some of the oldest chardonnay grapes on the Central Coast. We’ve kept the carbonation low for easy drinking out of the can. We were blessed to work with cult winemaker Bob Lindquist, and his expertise with this grape shows.
It surprises many people how neutral the chardonnay grape is, in that the impact of the soil, vineyard care and cellar work really show in the end result. That's why chardonnay can be so wildly different from various regions and winemakers! We used only a touch of oak here to let the fruit and savory notes shine while still creating some fun texture."
